• 725 g Özmen Sarı Durum Wheat Flour
• 625 ml water
• 12 g dry yeast
• 7 g honey
• 15–20 g salt
• 30 ml olive oil

For the topping:
• 200 ml water
• 100 ml olive oil
• 40 g sea salt
• fresh rosemary

How to Make Focaccia?

• Place the flour and half of the water in a large mixing bowl. Mix until the texture becomes homogeneous. Cover and let it rest at room temperature for 15 minutes.

• Add the dry yeast to the rested mixture. Gradually add the remaining water while kneading. Then add the honey, and a few more drops of water if needed, and continue mixing. Add the salt and olive oil, then gradually incorporate the remaining water until the dough comes together.

• Transfer the dough onto the counter and knead by folding. Lightly oil a clean bowl and place the dough inside. Cover with plastic wrap and let it rise at room temperature for 30 minutes to 2 hours, until doubled in size.

• Generously oil a baking tray. Transfer the risen dough onto the tray and spread it evenly using your fingertips. Cover the tray with plastic wrap and let the dough rest for another 1.5 hours at room temperature.

• In a separate bowl, mix the water, olive oil, and sea salt. Pour this mixture over the rested dough. Press with your fingertips to create the classic focaccia texture. Sprinkle fresh rosemary leaves on top. Bake in a preheated oven at 200°C for 20–25 minutes, until golden brown.

• Brush the hot focaccia with a bit of olive oil once it comes out of the oven. Let it cool slightly, then slice and serve. Enjoy.
