• 300 g Özmen Dorata Flour
• 3 medium eggs
• Pesto sauce

How to Make Fresh Pasta Dough

• Place the flour and eggs into a mixing bowl. Mix until a homogeneous dough forms. Transfer the dough to the countertop and knead for about 8–10 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 25 minutes.

• Divide the rested dough into 4 equal pieces. Lightly flatten each piece by hand, then pass it through a pasta machine to thin it out. If necessary, fold the dough and repeat the rolling process several times to achieve the desired thickness.

• Transfer the rolled dough sheets onto a lightly floured surface. Pass the dough through the pasta machine once more, then cut each sheet into two equal parts. Repeat the same process for the remaining dough pieces.

• Attach your preferred pasta-cutting attachment to the pasta machine and shape the dough accordingly. Lightly dust the shaped pasta with flour to prevent sticking.

• To cook, bring a large pot of salted water to a boil. Add the fresh pasta and cook until al dente, about 2–3 minutes. Meanwhile, prepare the pesto sauce in a separate bowl. Drain the pasta and add it directly to the sauce. Mix well, adding a few tablespoons of the pasta cooking water for a silky consistency.

• Transfer the pesto fresh pasta to a serving plate and garnish with pine nuts and fresh basil leaves. Serve immediately and enjoy.
